Elyssa's Famous Peanut Butter Balls

Ingredients:

3/4 cup Butter, softened

1 1/3 cups Creamy Peanut Butter

3 cups Confectioner’s Sugar

2 cups Chocolate Chips

1 Tbs. Shortening


Directions:

-Beat the butter and peanut butter together in a large bowl. Blend well. Gradually add in the confectioners (powdered) sugar and beat until well blended.

Cover and refrigerate for 30 minutes or until firm.

-Remove from fridge and shape into balls approximately one inch in diameter. Place the balls on a cookie sheet lined with either wax paper, parchment, or non-stick foil for easy cleanup. Place back in the fridge for another 30 minutes until firm.

-Place chocolate chips and shortening into a microwave-safe bowl and microwave at 50% for a minute at a time until glossy smooth, stirring after each minute to incorporate the shortening into the chocolate.

-Remove balls from fridge and dip each ball completely into the chocolate to coat, letting excess run off. Place back on lined cookie sheet. Place back into the fridge until the chocolate sets and is hard. You can store these in an airtight container in your fridge or freeze them for later.
